Corn Pancakes

The Fresh corn kernel and buttermilk make this pancake really taste and so soft!! This yet another recipe of pancake without Egg.



Ingredients:
  • 1 cup AP flour / Maida
  • 1 cup fresh Corn (fresh or Frozen)
  • 1 cup butter milk (or as required)
  • Few Coriander leaves (chopped)
  • 1 tsp Baking powder
  • Salt and Black Pepper as per taste
  • Oil for frying.
Method: 
      In bowl add maida, baking powder, salt and mix it well. Add buttermilk and make lumps free batter. Add cor meal, fresh corn , coriander leaves, pepper and mix it well.
Heat the griddle/ tava and sprinkle little oil. Pour the pancake batter about 2-3 inch circle. (or more then 2 inches) Make your that pancakes are cooked on Medium to low heat. Cook both the side till light brown color.

Serve hot with Chili sauce.

Hot Chili & Toamto Sauce

This is ultimate hot chili and tomato sauce with goes very well with Tacos, Burritos!



Ingredients:
  • 1/2 cup Tomato Paste (store bought)
  • 1 Onion (very finely chopped)
  • 2 Garlic cloves (very finely chopped)
  •  1-2 TBsp cup Lemon Juice
  • 1 Tbsp Red chili flakes 
  • 1/4 tsp Red chili powder 
  • 1/5 tsp Sugar
  • 2-3 tsp Oil
  • Salt and Black pepper as per taste.
Method:
        Heat the pan with oil, add garlic, onion and saute till they get tender and nice brwon color. Add tomato paste and saute for few minutes. Add little water, lemon juice, salt, pepper, red chili powder, sugar  and bring it to boil. Let it come to room temperature and serve.

Note:
  • This can be store in refrigerator for 2-3 days.
  • Adjust Red chili and lemon, pepper as per taste.

Capati Phodani

Chpati phodani / Vagharni is made for the breakfast with leftover chaptis. Its very simple and easy to make.


Ingredients:
  • 2-3 Chaptis (Leftover for 1 day)
  • 1 Onion (chopped)
  • 1 Tomato (chopped)
  • 1/4 tsp Cumin seeds
  • 1/4 tsp Mustard seeds
  • 1/2 tsp Red chili powder
  • 1/4 tsp Turmeric powder
  • A pinch of Hing
  • 2-3 Tbsp Oil
  • Few fresh Coriander leaves
  • Salt  and Sugar to taste.
Method: 
     Make a make pieces of chaptis and keep it a side. Heat the pan with oil, add cumin, mustard seeds and allow them to splutter. Add onion, tomatoes and fry till they turn tender. add red chili , turmeric powder and mix everything well. Add pieces of chapti , salt , sugar and mix it well. Garnish with coriander leaves.
Serve with curds.

Apple Chutney




Ingredients:
  • 2 Apples (chopped with or without skin)
  • 2 tsp Ghee
  • 1-2 tsp Lemon juice
  • Few Black peppercorns 
  • Few Coriander seeds
  • Few Fennel seeds
  • Few Cumin seeds
  • Pinch of Nutmeg powder
  • Pinch of Cinnamon powder
  • Dry coconut (optional)
  • Salt and  Sugar, Red chili powder as per taste.
Method:
Heat the pan with ghee, add cumin seed , coriander seeds, fennel seeds fry for few minutes. Add chopped apple chunks  and fry for 1-2 minutes. Add sugar, black peppercorn, red chili powder, salt, nutmeg, cinnamon powder and mix everything well. Add little water and cook till water is evaporated. 
 Serve hot or cold...

Happy Ugadi & Ramnavmi

Wish you a very happy Ugadi and Ramvanmi..I want to post Ugadi dishes  long back but some how couldn't post it. Ugadi dishes includes Shevgi Payasa (vermicelli sweet), Manvinkai Anna (Mango Rice), Koshmbri (salad).

Here I am writing the very famous salad that is koshmbri. Mango rice you can find here.
Ingredients: 
  • 1/2 cup Moong dal (soaked for 5-6 hrs)
  • 1 Carrot (shredded)
  • 1 Onion (chopped)
  • 1-2 green Chilies (chopped)
  • Few Coriander leaves (chopped)
  • Lemon and Salt as per taste.
Mix all the above ingredients and give tempering with following ingredients.
 For Tempering / Tadaka:
  • Oil,
  • Mustard seeds, 
  • Hing.
Ramnavami dishes are very simple they are Chow- Chow Bath ..means Upama & Sheera (sooji halwa)


 Sooji Halwa/ Sheera
Ingredients:
  • 1 cup Rava/ Sooji
  • 1 cup Sugar
  • 1/2 tsp Cardamom (powder)
  • Few Raisins
  • 1/4 cup Milk (hot)
  • 2-3 Tbsp Ghee
  • Water as required (hot)
Method:
       In non stick pan pour ghee and roast rava on medium heat till you get nice aroma. Add sugar and mix for few minutes. Add hot milk and water, raisin and stir it well. (no lumps) Cook for few minutes and turn off the heat cover it and let it cook its steam.

Serve hot...

Upama/ Upittu
Ingredients:
  • 1 cup Rava
  • 1Onion (chopped)
  • 2-3 green Chilies (chopped)
  • 1/2 tsp Cumin seeds
  • 1/4 tsp Mustard seeds
  • 1/4 tsp Urad Dal
  • 1/4 tsp Split chickpeas
  • A pinch Hing
  • 1/4 Sugar (optional)
  • Few Curry leaves
  • Salt to taste
Method:
       Roast the rava with little oil till nice aroma and keep it a side. Heat the pan with oil add mustard , cumin seeds, hing, curry leaves, urad dal, split chickpeas and allow them to splutter. Add onion and fry till they get tender. Add water (as required), add sugar, salt and bring to boil. Once water is boiling add roasted rava and stir contentiously to avoid lumps. Once it starts thicken then turn off the heat.

Serve hot.

Potato Pancakes

This is very easy and quick recipe...Its good with morning tea or evening as snack...




Ingredients:
  • 2 Potatoes
  • 1 Onion
  • 2-3 Tbs AP flour / Maida
  • 2 Mayonnaise (optional)
  • 1/4 tsp Red chili powder
  • Salt and Pepper as per taste
 Method: 
            Shred the potatoes without skin. Squeeze all the water from the potato. Add thinly sliced onion. Add red chili powder, salt, paper and mix everything well. Add maida and make round cakes.(not to much thick)
Heat the tava with little oil, place cakes. Cook on low heat for 5-6 minutes each side or till you see nice golden brown color on it.
Serve hot with ketchup.

Vegetable Dum Biriyani



 Ingredients:
  • 1 cup Basmati rice (uncooked)
  • 1 cup each  Potatoes, Carrots, Peas,(boiled & Cubed)
  • 2 Onion (sliced)
  • 1 Tbsp Ginger& Garlic paste
  • 1 tsp Fennel seeds (sounf)
  • 2 Tbsp Tomato paste
  • 1/4 cup Milk
  • Few Saffron
  • 2-3 Tbsp Oil/ ghee
  • 1/2 tsp Turmeric powder
  • 1/2 tsp Garam Masala
  • 1/4 red chili powder
  • Few Mint leaves
  • Few Coriander leaves
  • Salt to taste 
  • Aluminum foil to cover.
Few Masala:
  • 6-8 pods Green Cardamom pods & 2 Black Cardamom
  • Small Cinnamon Stick
  • 5-6 cloves
  • Few Peppercorns
  • Few Bay leaves
  • 1-2 pinch of Nutmeg
Method:
In  a blow Add milk and saffron and keep it a side.
In a pan add few drops of ghee/ oil and fry rice still you get nice shiny. In a sauce pan add 1 1/2 cup water (or required amt of  water for rice). Add all masala ingredients and bring to boil. Now add above fried raw rice in this water and cook till all water evaporated (rice will not cooked fully). put the led and keep it a side.

In a pan add oil and fry onion slices until brown, add ginger n garlic paste and fry for few minutes. Add tomato paste, turmeric , garam masala, red chili powder, fennel seeds and fry for few minutes. Add all cooked vegetables and cook for few minutes.  Season well with salt. 

Assemble the dish:   Bottom and top is covered with rice so now we layer... In a other big pan add very little water and spread the rice. Now spread the cooked vegetables ,sprinkle few coriander leaves, mint leaves, fried onions. saffron milk. Repeat this for further rice. Cover with aluminum foil. Cook about 20-25 minutes.

Serve hot with cool Mint Raita.

Note: 
Fry more onion so you can garnish well and these taste good also.
Remove the aluminum foil only once your ready to serve.




Mint Raita
Yogurt, sliced tomatoes,onion, few mint leaves and salt. Mix everything and serve.
