Corn Upma

Fresh corn upma is filling and so fresh for summer season..



Ingredients:
  • 2 cup Corn (fresh)
  • 2 tsp Oil
  • 1 Onion (chopped
  • 2-3 Green chillies (chopped)
  • 1/4 tsp Cumin seeds
  • 1/4 tsp Mustard seeds
  • 1/4 tsp Termeric powder
  • Fresh coriander leaves (chopped)
  • 1/4 cup Fresh Coconut 
  • Few drops Lemon juice
  • Salt to taste

Method

   Heat the pan put oil. add cumin , mustard seeds let them splutter, add green chillies, onions and saute till onion get light brown color. Add turmeric powder, corn , salt, coconut and mix well. Add little water so that corn is cooked. Cook for 5-7 minutes or so .or all the water is evaporated and corn  is cooked till tender.

Garnish with coriander leaves and lemon juice.

Sol kadi (without coconut !!!) & Award

Fresh Sol, Amsol , Kokum/ Kokam  with buttermilk? Ya its so healthy and no coconut is added so I can drink as mush as I want! It tasted good as the buttermilk give very creamy flavor to it.


Ingredients:
  •  5-6 Sol / Kokum (used fresh )
  •  1 and 1/2 cup Butter Milk (store bought)
  • 1-2 green Chilies
  • 1 Garlic pod
  • 1/2 tsp Cumin seeds
  • Salt and Sugar as per taste.
  • Few fresh Coriander Leaves (chopped)
Method:
  Soak the fresh sol / kokum in a water for 1 hour or so. In a blender add this soaked sol / kokum and all above  ingredients. Blend everything till you get nice pink colored creamy sol kadi.

Before serving chill it of 1 hr or so. You can have with rice or just drink in these sunny summer days!


Note:
  • If you are using dried Sol / Kokum then soak it in hot water for 2-3 hrs or so.
  • Adjust the sugar, sol / Kokum as per your taste. 
I am updating the post as many blogger friends are asking me more about or they are new to Kokoum / Amsol. So I am attaching the fresh and dried Kokam/ Amsol Pics and also brief information according to wiki. 
 Kokum is made from a fruit from the plum family (Garcinia  indica/ Ratamba). The pulp and peels of the fruit are separated. The peels are  sun dried till  skin shrivels up but retains the red/purple color. This is now kokum/ sol, which is used as a souring agent in cooking and making kokum sherbet and sol kadhi. This we use in Saru, Kadi and also  if anyone is having acidity problem with Tamarind.

This also know as Amsol/Aamsul, Bindin, Biran, Bhirand, Bhinda, Bhrinda, Brinda, Kokum/Kokam, Katambi, Panarpuli, Kudam Puli, or Ratamba.

This is used in the cooking of coastal areas of Maharastra, Karnatkak & Goa.

Mac & Cheese

Macaroni and cheese  is an ultimate comfort food.I saw this dish many a time on the television. I tried with my own variation with veggie like cauliflower and without adding egg. I loved it more as its raining here and this was so comforting and easy to make. It turnout very cheesy,  and yummy Mac & Cheese!!!



Ingredients:
  • 1 cup Elbow pasta (or any shaped pasta)
  • 1 Onion (finely chopped)
  • 1/2 cup Cauliflower (used frozen) (chopped finely)
  • 3/4 cup Milk (used whole milk)
  • 1/2 cup Bread crumbs + some more
  • 2 tbsp Butter + some more
  • 3-4 tsp AP flour / Maida
  • 1 tsp Red chili powder
  • 1/2 tsp Yellow Mustard paste
  • Sat and Black pepper as per taste.
  • Thyme (used dried) 
  • Cheese ( used shredded sharp and mild cheddar cheese , monterey jack cheese)
Method:

       Heat the pan with butter, add onion, cauliflower and fry till they turn light brown. Add bread crumbs and roast for few minutes. Turn off the heat and let it sit for a while.
Cook the past as per the instruction on the box. (not to mushy but al dent )

Heat the non stick pan with butter, sprinkle ap flour and stir for few minutes till the rawness is gone. Add milk slowly and stir continuously and make sure there are no lumps.Now add salt, pepper yellow mustard, thyme, red chili powder and stir for few minutes. Add cooked pasta, cheese , roasted onion, bread crumbs and cauliflower mix. Mix gently everything.

Grease the baking pan with butter. Pour this above made cheese pasta.  Sprinkle more cheese and roasted bread crumbs.
Bake at 375 F for 15 minutes or till you see nice cheesy bubble and light brown on the top.
Serve hot.....
 Notes: 
  • If you don't link cauliflower then omit the step.
  • While making white sauce if lumps are there then don't worry just keep on whisking. Lumps will be gone.
  • Save some butter roasted breadcrumb and cauliflower for garnish on the top. (before baking)
  • Use generous amount of cheese.

Beets & Potato Chips


Ingredients:
  • 2 Beets
  • 2 Potatoes
  • Oil for deep frying
  • Salt to seasoning.
Method:
    Peal the skin of beets & potatoes. Slice them paper thin and immediately deep fry these in hot oil till they turn light brwon and crispy. Drain them and keep it on paper towel and  sprinkle some salt.

Serve hot or cold.

Notes:
  • Before frying the sliced beets and potatoes press them on paper towel so the water is absorbed from the veggies.
  • I have used peanut oil for frying.
  • Fry them in small batches. If its overcrowded, they may turn into soggy chips.

Rice Pudding / Kheer

Rice pudding / kheer is simple to make. I made this delicious kheer on auspicious day of Akshay triti / tritiya .


Ingredients:
  • 1/4 cup Uncooked Rice (used basmati rice)
  • 2 tsp Ghee/ tup
  • 2 cup Whole milk
  • 1/2 tsp Cardamom powder
  • Few dry fruits (used  almond, cashewnuts)
  • Sugar as per taste
Method:
     Heat heavy bottomed  pan with ghee, add uncooked rice and fry for 2 minutes or so. Add milk and bring to boil. Stir continuously. Let the milk reduce to half of its volume.Once the rice is almost cooked add sugar, dry fruits, cardamom powder and mix it well. Now it will be thick and creamy.

Serve Hot or Cold with Onion pakoda.

Notes:
  • Make sure your stir constantly when milk is boiling other wise rice and milk will burn or  stick to bottom or may create lumps too.
  • Once the rice is cooked mash with masher so you get more thick kheer.
  • Kheer will continue thickens as it cools.
