The coconut and sweetened cranberries make methi rice so delicious..
Ingredients:
- 1 cup Rice (uncooked)
- 1 cup Methi Leaves / Fenugreek leaves
- 1/2 cup Cranberries(dried and sweetened)
- 1/4 cup Fresh Coconut or coconut Milk
- 2-3 Green chilies
- 1 tsp Ginger & Garlic paste
- 1 Onion (chopped)
- Few curry leaves
- Few Cashwenuts
- 2-3 Tbsp Ghee or Oil
- Salt to taste.
For masala:
- 2 cloves
- few Black peppercorns
- 1 Bay leaf
- 1 small piece Cinnamon stick
Method:
Heat the Pan or pressure cooker with oil/ ghee. Add cumin seeds, all masala ingredients and roast for few minutes till you get nice aroma. Add onion, green chilies, curry leaves, ginger, garlic paste , cashewnuts methi leaves saute till they turn little light brown. Add rice , cranberries and fry till everything is coated with ghee. Add fresh coconut or coconut milk , salt and cook for few minutes. Add required quantity of water and cook with 2 whistle.
Serve with Rita / Dal....
Variation: Add any other pea like, Green peas, check peas.
