Mehti & Cranberry Pulao



The coconut and sweetened  cranberries make methi  rice so delicious..

Ingredients:
  • 1 cup Rice (uncooked)
  • 1 cup Methi Leaves / Fenugreek leaves
  • 1/2 cup Cranberries(dried and sweetened)
  • 1/4 cup Fresh Coconut or coconut Milk
  • 2-3 Green chilies
  • 1 tsp Ginger & Garlic paste
  • 1 Onion (chopped)
  • Few curry leaves
  • Few Cashwenuts
  • 2-3 Tbsp Ghee or Oil
  • Salt to taste.
For masala:
  • 2 cloves
  • few Black peppercorns
  • 1 Bay leaf
  • 1 small piece Cinnamon stick
Method:

Heat the Pan or pressure cooker with oil/ ghee. Add cumin seeds, all masala ingredients and roast for few minutes till you get nice aroma. Add onion, green chilies, curry leaves, ginger, garlic paste , cashewnuts methi leaves saute till they turn little light brown.  Add rice , cranberries and fry till everything is coated with ghee. Add fresh coconut or coconut milk , salt and cook for few minutes. Add required quantity of water and cook with 2 whistle.

Serve with Rita / Dal....
Variation: Add any other pea like, Green peas, check peas.
