Ingredients:
- 1 cup Basmati rice (uncooked)
- 1 cup each Potatoes, Carrots, Peas,(boiled & Cubed)
- 2 Onion (sliced)
- 1 Tbsp Ginger& Garlic paste
- 1 tsp Fennel seeds (sounf)
- 2 Tbsp Tomato paste
- 1/4 cup Milk
- Few Saffron
- 2-3 Tbsp Oil/ ghee
- 1/2 tsp Turmeric powder
- 1/2 tsp Garam Masala
- 1/4 red chili powder
- Few Mint leaves
- Few Coriander leaves
- Salt to taste
- Aluminum foil to cover.
Few Masala:
- 6-8 pods Green Cardamom pods & 2 Black Cardamom
- Small Cinnamon Stick
- 5-6 cloves
- Few Peppercorns
- Few Bay leaves
- 1-2 pinch of Nutmeg
Method:
In a blow Add milk and saffron and keep it a side.
In a pan add few drops of ghee/ oil and fry rice still you get nice shiny. In a sauce pan add 1 1/2 cup water (or required amt of water for rice). Add all masala ingredients and bring to boil. Now add above fried raw rice in this water and cook till all water evaporated (rice will not cooked fully). put the led and keep it a side.
In a pan add oil and fry onion slices until brown, add ginger n garlic paste and fry for few minutes. Add tomato paste, turmeric , garam masala, red chili powder, fennel seeds and fry for few minutes. Add all cooked vegetables and cook for few minutes. Season well with salt.
Assemble the dish: Bottom and top is covered with rice so now we layer... In a other big pan add very little water and spread the rice. Now spread the cooked vegetables ,sprinkle few coriander leaves, mint leaves, fried onions. saffron milk. Repeat this for further rice. Cover with aluminum foil. Cook about 20-25 minutes.
Serve hot with cool Mint Raita.
Note:
Fry more onion so you can garnish well and these taste good also.
Yogurt, sliced tomatoes,onion, few mint leaves and salt. Mix everything and serve.
