Chickpeas & Mehti Patti Sandwich






Ingredients: 
  • 1 Cup Chickpea (kabuli chana)
  • 1 cup Methi leaves (chopped)
  • 1/4 cup Maida/ all purpose flour
  • 1/5 cup Bread crumbs
  • 2 pod Garlic
  • 2-3 Green chilies
  • 1 tsp Cumin seeds
  • Croissants or any breads
  • Salt to taste
  • Oil for Deep fry or Shallow fry
Method:

Soak the pea overnight and cook till tender. In a grinder add cooked peas, garlic, cumin seeds, green chilies, methi leaves, salt to taste and make a coarse paste. Mix this paste with maida , bread crumbs and make a patties. Deep fry in oil or sallow fry on tava. Both taste good...:)

Serve with cheese and fresh cucumber , tomatoes, lettuce , ketchup  or any other combination as you like !
Note:
  • Make sure the chickpeas are not over cooked (not mushy)
  • If you find the paste too dry then add little water while making patties.
  • Shallow fry patties make taste little bitter.

Green Tomatoes Chutaney




Ingredients:
  • 2-3 Green Tomatoes
  • 2 Green Chilies
  • 1 Garlic 
  • 2 Tbsp Peanut powder
  • 1/4 tsp Cumin seeds
  • few Coriander leaves
  • Jaggery as per taste
  • Salt to taste.
Method :
         Roast the chopped tomatoes, green chilies in the oil till they turn little brwon. Add roasted tomatoes, chilies, cumin seeds, coridander leaves, garlic, salt, peanut powder , jaggery and make fine paste.



Serve with hot Chapati / Rice.

Note: While making the paste one can add water. Make sure not too much as tomatoes contains water.

Spicy/Khara/ Thikat Puri




Ingredients:
  • 1 cup whole Wheat flour (chapathi atta)
  • 1/2 cup Jawar  flour (rotti/ bhakari atta)
  • 2 tsp Gram flour (beasn)
  • 2 tsp Urad dal  (soaked for 1 hr)
  • 3-4 Green Chilies
  • 1 tsp Cumin seeds
  • 1/4 tsp Ajawain
  • 1/4  tsp Coriander seeds
  • 1/4 cup fresh Coriander leaves
  • Salt to taste
  • Oil for deep frying.
Method:

      In a mixie add soaked urad dal, add green chilies, coriander seeds, ajawain, coriander leaves and make a paste with little water. In a larga bowl add all flours, above made paste and salt to taste. Make a soft dough and let it rest for 1/2 hr to 45 minutes.
Take a small size of roll and pat with oil/ water and deep fry in the oil.


Serve hot with coconut chutney/ curds.

Vangi Bath



 Ingredients:
  • 5 Eggplant / Vangi / Badnekai
  • 1 cup Rice (uncooked)
  • 1 Onion (sliced/ chopped)
  • 2 tsp Peanuts
  • Few Curry leaves  
  • 1/2 tsp Red chili powder
  • 2 Tbsp Oil
  • 1/2 tsp Mustard seeds
  • 1/2 tsp Cumin seeds
  • 1/4 tsp Termeric powder
  • 1 Bay leaf
  • 2-3 dry Red Chilies
  • Salt to taste
For Masala :
  • 1/2 cup Fresh coconut
  • 1 small Onion  (chopped)
  • 1 Cardamom pod
  • 2 Cloves
  • 1/2 tsp Cinnamon powder
  • 1/4 tsp Black peppercorns
  • 1/4 cup Coriander leaves 
  • 1 tsp Oil
  • Salt to taste 
Method:
      Heat the pan with oil, saute all the masala ingredients and make a fine paste. Wash the eggplants and slit  into four parts.Fill this masala paste into eggplants and set it aside.


Heat the heavy bottom vessel with oil, add cumin seeds, mustard seeds allow them to splutter. Add bay leaf, dry red chilies, curry leaves, peanut, onion, ginger ,garlic paste and saute on medium heat for few minutes. Add red chili powder, termeric powder ,rice. Pour the required quantity of water. Let it come till boil. Place these eggplant and let it cook till the rice and eggplants get tender.

Serve with Koshmbir.
Note:
  • You can cook directly in the pressure cooker also.(but the eggplant turn very mushy)
  • You can use ready made MTR's Vangi bath masala powder, instead of grinding the masala.
  • You can cut the eggplants into small pieces and fry them in the tadaka.
  • Soak the raw rice in water at least for 15 minutes.
For Koshmbir:
1 Cucumber, 1 tomato, 1 onion, cut into small pieces and 2 tsp peanut powder, curd and salt to taste.

Rasam (with black pepper)



Wish all a very Happy New Year....
As I am back from my Vacation..im still feeling the holiday mood...not very much in the kitchen.....So i just started my days with Rice and Rasam !



Ingredients:
  • 2 tsp Black Pepper (coarse crushed)
  • 1 Tomato (chopped)
  • 2 tsp Tamarind juice
  • 1/2 tsp Jaggery
  • 1 tsp Cumin seeds
  • 1 tsp Mustard seeds
  • A pinch of Asoefetida / Hing
  • Few Curry leaves
  • 1 Tbsp Ghee / Tup
  • 5 cup Water
  • 2 tsp Coriander leaves
Method:

In a pan add tamarind juice, tomatoes, black pepper, jaggery , salt and bring to boil on low flame.Once it boiled turn off the heat.
Heat a small pan with ghee, add cumin , mustard seeds allow them to splutter. Add asoefetida, curry leaves , coriander and leave for minute or so. Add the boiled black pepper mix and cook for 1-2 minutes.

Serve hot with plain rice.

Poori & Aloo


Ingredient:
  • 1 cup Chapti Atta/ Flour
  • 1 Tbsp Oil
  • Salt
  • Water
  • Oil for deep fry.
Method:

In bowl mix the flour, salt, oil and knead the dough with water. Let it rest for 1 to 2 hrs.
Roll the dough for 8-9 in diameter. With cookie cutter cut the puri's and deep fry in the oil.
They will puff up nicely.



Aloo Sabji / Pallya


Ingredients:
  • 3-4 medium size Potatoes (boiled and chopped)
  • 1 Onion ( chopped)
  • 3-4 Green Chilies
  • 1/2 cup Coconut (fresh)
  • ½ tsp Cumin seeds
  • ½ tsp Mustard seeds
  • ¼ tsp Urad dal (optional)
  • ¼ tsp Channa dal (optional)
  • ¼ tsp Turmeric powder
  • 1 Tbsp Oil
  • Salt to taste
  • Curry leaves
  • Coriander leaves (chopped)
Method:
 
Heat the pan with oil, add mustard, cumin seeds , channa dal, urad dal, curry leaves, allow to splutter. Add green chilies , onion and saute till they turn brown color. Add turmeric powder,  salt , potatoes  and coconut (cut cubes or mashed) mix it well.
Garnish with coriander leaves, coconut.
