Fresh corn upma is filling and so fresh for summer season..
Ingredients:
- 2 cup Corn (fresh)
- 2 tsp Oil
- 1 Onion (chopped
- 2-3 Green chillies (chopped)
- 1/4 tsp Cumin seeds
- 1/4 tsp Mustard seeds
- 1/4 tsp Termeric powder
- Fresh coriander leaves (chopped)
- 1/4 cup Fresh Coconut
- Few drops Lemon juice
- Salt to taste
Method
Heat the pan put oil. add cumin , mustard seeds let them splutter, add green chillies, onions and saute till onion get light brown color. Add turmeric powder, corn , salt, coconut and mix well. Add little water so that corn is cooked. Cook for 5-7 minutes or so .or all the water is evaporated and corn is cooked till tender.
Garnish with coriander leaves and lemon juice.

Corn upma is something so new and sounds damn interesting. I generally hold flag against upma.. ;) but then this version is definitely interesting and I think I will surely like it ;)

When I first saw the title, I thought you added some corn to regular upma with semolina. But upma only with corn is really a creative idea. looks so filling and delicious.
