Pancake & Buleberry Sauce








Ingredients: (makes 4 pancakes)
  • 1 cup All Purpose flour / Miaida,
  • 1 Egg
  • 1 tsp Baking powder
  • 1/2 tsp Baking soda
  • 1 cup Milk
  • a pinch a Salt
  • 2 tbsp Vegetable oil
  • Butter for skillet
For Blue berry Sauce / Syrup
  • 1 cup Blue berry
  • 1 tsp Honey
  • 1/2 tsp Lemon juice
  • 1 Tbsp Sugar
Method:

In a a blow add all purpose flour, baking powder, baking soda, salt and mix it well. In another blow add milk, veg oil, egg and slightly beat it. Add this egg mixture to flour mix and mix it. (don't over mix it otherwise they will be not puffy..if any lumps are then don't worry...just lightly mix it)




Heat the skillet with butter, pour 1/4 cup of batter on the skillet. Let it cook for 2-3 minutes or till the bottom turns light golden brown color. Flip it on other side and let it cook for 1-2 minutes.
(These will be puffy and soft as you can see in the above pic)

Serve hot with Blue berry sauce/ Butter honey & Black Coffee..:)




Blueberry Sauce/ Syrup

Heat the pan on low heat, add blueberries,sugar, lemon juice and honey stirring occasionally, until the berries give off some liquid. (but retain there shape, not mushy) , 5-6 minutes. Remove from the heat.

Serve cold or hot.

Note: If berries are sweet / sour then adjust according.

Variation:
If you don't like blue berry sauce the have with Butter & Honey with Black Coffee....

Dear S,
I know blue berry may not find in India, but u can make coconut syrup , orange sauce or just honey and butter.
